Es Buto Ijo is known as one of the traditional drinks from Kediri, East Java. Surprisingly, this drink was actually created by one of the local residents.

Buto Ijo Ice Dessert

Ingredients

  • 100 g mung beans, cooked until soft

  • 50 g sago pearls, boiled

  • 200 g jelly (100 g coconut-flavored jelly + 100 g melon-flavored jelly), shredded and diced

  • 100 g kolang-kaling (sugar palm fruit)

  • 1 tbsp basil seeds, soaked in warm water

  • 150 g melon, scooped into small balls

  • 130 ml melon syrup

  • 80–100 ml sweetened condensed milk

  • 300–500 g shaved ice

  • 3 cherries

  • 3 sprigs mint leaves

Directions

  1. Prepare a bowl and add all the cooked mung beans, boiled sago pearls, jelly, kolang-kaling, and the scooped melon.
  2. Add the soaked basil seeds and the ice cubes or shaved ice.
  3. Pour in the melon syrup and sweetened condensed milk.
  4. Garnish with cherries and mint leaves.
