Buto Ijo Ice Dessert
Es Buto Ijo is known as one of the traditional drinks from Kediri, East Java. Surprisingly, this drink was actually created by one of the local residents.

Ingredients

100 g mung beans, cooked until soft

50 g sago pearls, boiled

200 g jelly (100 g coconut-flavored jelly + 100 g melon-flavored jelly), shredded and diced

100 g kolang-kaling (sugar palm fruit)

1 tbsp basil seeds, soaked in warm water

150 g melon, scooped into small balls

130 ml melon syrup

80–100 ml sweetened condensed milk

300–500 g shaved ice

3 cherries
-
3 sprigs mint leaves
Directions
- Prepare a bowl and add all the cooked mung beans, boiled sago pearls, jelly, kolang-kaling, and the scooped melon.
- Add the soaked basil seeds and the ice cubes or shaved ice.
- Pour in the melon syrup and sweetened condensed milk.
- Garnish with cherries and mint leaves.
