Crispy Hollow Fried Meatballs

Ingredients

400 grams chicken thigh fillet

100 grams peeled shrimp

2 teaspoons salt

½ teaspoon seasoning powder

¼ teaspoon ground pepper

2 tablespoons dried shrimp (ebi)

1 teaspoon granulated sugar

1 tablespoon fried garlic
-
1 teaspoon baking powder

1 tablespoon sesame oil

2 eggs

130 grams ice cubes

250 grams tapioca flour
Directions

Place the chicken, shrimp, salt, seasoning powder, pepper, dried shrimp (ebi), sugar, fried garlic, baking powder, sesame oil, eggs, and ice cubes into a food processor.

Blend all the ingredients until they become very smooth and well combined.

Once the mixture is smooth, add the tapioca flour and blend again until evenly mixed and the dough becomes slightly sticky.

Heat a generous amount of oil. Scoop the mixture with a spoon and shape it into small balls.

Fry the balls in hot oil while occasionally turning them so they remain round and expand. This process usually takes about 10 minutes.

After the meatballs start to expand, reduce the heat and continue frying for about 25–30 minutes until they turn golden brown and the texture becomes dry and crispy.

Remove the fried meatballs from the oil and drain before serving.
